Ingredients:
- 1 pound (500g) lamb, cut into chunks
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, chopped
- 1 zucchini, chopped
- 1 potato, chopped
- 1 tablespoon tomato paste
- 1 tablespoon harissa
- 1 teaspoon ground cumin
- 1 teaspoon coriander
- 2 cups couscous
- 4 cups vegetable or chicken broth
- Olive oil
- Salt and pepper to taste
Instructions:
- Heat olive oil in a large pot and brown the lamb pieces.
- Add the onion, garlic, cumin, coriander, and tomato paste. Cook until onions are soft.
- Add the carrots, zucchini, and potato, and cook for 5 minutes.
- Stir in harissa and broth, bringing the mixture to a boil.
- Simmer for about 30 minutes, until the lamb is tender.
- In the meantime, prepare couscous by following the package instructions.
- Serve the lamb and vegetable stew over the couscous.
